Whole meal pancakes

These are both tasty and healthy, which is a rarity, and I managed to cook them successfully, which is even rarer:

Ingredients:

  • 125g wholemeal flour
  • 1 medium egg
  • 300ml semi skimmed milk
Method:
  • Place the flour in a large bowl, mix in the egg and gradually whisk in the milk to give a smooth batter.
  • Heat a little oil in a small frying pan and add a little of the batter to cover the base thinly. 
  • Cook the pancake for 1 min until golden, turn and cook for 30 seconds. 
  • Repeat to make eight pancakes

  • Hurrah! You're finished, and if you greased the pan and didn't burn the pancakes (not that I'd know anything about either of those mistakes, obviously) then you can fill them! I did some savoury, filled with roasted peppers, and some sweet, filled with cooked banana. They were yummy, and I think I might make them again this week. Good luck!
